Genesis One by Jimmy Akin – This excellent series of blog posts investigates the meaning of the creation account in Genesis from a textual point of view, rather than from a scientific point of view. As Akin explains, "My interest is in figuring out what the text most likely means taken on its own terms, not trying to harmonize it with modern science." His conclusions based on this method, and the reasoning that he uses to reach those conclusions, are quite interesting.
